Future Forward
Gitana del Mar tries to cut plastic use as much as possible. No plastic bottles of water or plastic straws. Organic waste is used for composting for their food forest and gardens as well as to feed local livestock farms in the area. They have a vegetable and herb gardens that supply many of the ingredients for their restaurant. In recent years GDM created new community and sustainable tourism activities for visitors and guests, such as Beach Clean Ups, and visits to local rural underprivileged schools where guests get to create culture exchanges with the local children, such as murals, workshops, and activities all having to do with environmental education. Their social and cultural initiatives have been going on for over 6 years via their non-profit foundation, La Sierra Artist Residency Foundation: http://www.lasierraartistresidency.org
